Scrub golden Yukon potatoes and poke holes. Lightly brush with olive oil and sprinkle with kosher salt. Bake at 375 for 45min to 1 hour. (depending one size of potato) We pile ours high with extra fresh steamed broccoli. The golden Yukon has a much richer taste than a normal russet.
